Hummus, Dips and Antipasti
Simple hummus
Ingredients:
- 1 garlic clove, mashed
- 1 15-oz can of chickpeas
- 1/3 cup of tahini (roasted sesame paste)
- 1/4 cup fresh lemon juice
- 1/4 cup cold water
- 1 Tbs olive oil
- salt, pepper
Throw the garlic, drained chick beans, tahini paste, lemon juice, water and olive oil into a blender and set it to low speed. Add salt, starting at a half a teaspoon, to taste.
Guacamole
Ingredients:
- 2 ripe, large avocados
- 1/2 tsp ground cumin
- 1 ripe tomapoe
- 1/2 minced white onion
- 1 small chili pepper
- some cilantro leaves
- 1 Tbs fresh lime juice
- salt, pepper
Cut up the avocado in large chunks after removing the seed. Mash it coarsely in a large bowl using a fork. Add the remaining ingredients, chopped up or finely diced, and blend gently. Leaving some avocado chunks in there. Last add pepper and salt to taste.
